CHICKEN SWEET ASADO


One of the cool things I enjoy about food blogging is finding new and exciting products in the market that make preparing dinner for the family quick, easy and fun. Part of our high food costs, of course, is the recipe development that goes with the territory of food blogging for a living. But, sadly, a huge chunk of that high food costs is also from food going to waste. I get overly excited about the recipes I work on and tend to buy more than what we need in a given week.

You know how it is, you open the fridge and there you find milk and cheeses past their best buy dates or produce and herbs withering their way to the trash. As much as cilantro, basil, parsley or dill deliciously steps up flavors, they’re just too fragile to stay fresh until the whole bunch is used up! I am sure you’ve also had your fair share of forgotten garlic bulbs already sprouting green shoots in the deep recess of your produce bin. Frustrating, amiright?

Ingredients :

2 lbs. chicken thighs (bone-in)

3 tablespoons soy sauce

2 tablespoons sugar

4 cloves crushed garlic

½ teaspoon 5 spice powder

4 pieces star anise

3 tablespoons cooking oil

2 cups chicken broth

½ teaspoon salt

¼ teaspoon ground black pepper

3 tablespoons cooking oil


Procedures :

Rub salt all over the chicken. Let it stay for 10 minutes.

Heat the cooking oil in a wide cooking pot.

Pan-fry both sides of the chicken in medium heat for 5 minutes per side.

Scoop out the excess oil. Add the garlic and cook until light brown.

Pour-in the soy sauce and chicken broth. Stir and let boil.

Put-in the 5 spice powder and star anise. Cover and simmer for 30 to 35 minutes. Note: Add water if needed.

Add-in the sugar and ground black pepper. Stir.

Transfer to a serving bowl. Serve.
